Welcome to summer in Indiana. Pork butt steaks with ranch dressing and garden succotash! I have changed up my whole game plan this year and become very progressive in my cooking. I bout a six pound butt roast and deboned it. I used meat glue to put the roast back together and the I cooked the roast sous vide at 140 degrees/60 Celsius for 24 hours. I place it I to an ice bath, cooled it, and then cut it into 3/4 inch 6 ounce steaks. I froze the steaks in packs of two and pull out what I need when I need it. I quick grill it at a very hot temp to seat it and then serve it with homemade ranch dressing. The succotash is chiller too. It is a combination of odds and ends from the garden. Okra, zucchini, sweet corn, and tomato. #dinnerathome #grilling #sousvide #thyme #dinner
