Pea and pesto soup:
Add 200g fresh/frozen peas along with 3 shallots and 2 cloves of garlic to a pot with 3 cups of boiling water and cook until just tender. Strain and retain the cooking water.
Once slightly cooled, blend the peas-shallots-garlic with 1 tbsp pesto, a good squeeze of lime, and season with salt and pepper. Add just enough cooking water to get the right consistency and blend until smooth. Can be eaten hot or cold.
