If we'd been smart on Sunday, we could be eating these spring rolls right now! Like Sarah is.

She cuts up veg at the start of the week so she can make rolls quickly the night before. (She also keeps a jar of ginger-peanut sauce in the office fridge!) To keep the rolls moist, she stores them with a moistened paper towel.
