Crunchy vegan Asian quinoa salad! Mix together quinoa with green cabbage (or red if you're feeling fancy), bell pepper, steamed broccoli, and tofu that's been browned in sesame oil. Toss with this savory sauce: peanut butter, garlic chili sauce, soy sauce, sesame oil, ginger, and shallot. Cucumber would not be a bad addition to the veggie mix.
