Our editor Kenzi took her mom's potato salad and did what daughters do: changed it! (This is Mackenzie Merkel's way-cute, chunky bowlful.) To make it yours, boil potatoes until fork-tender, then shock in ice water. Sprinkle with vinegar. Mix a mayo-mustard-olive oil dressing, then set some red onion rings in water to mellow. Toss all these—plus chopped cornichon, chopped boiled egg, and chopped herbs—adding only enough dressing to coat. Garnish any way you like and eat it like Mackenzie—with a pretty spoon.
