It's my youngest daughter Lynnie and I are the only ones eating tonight. This morning I asked her if she wanted anything special for dinner tonight. Lynnie has her own food vocabulary so when she said duck ham I had to scratch my head for a second, after all I expected the usual pizza. Lynnie has always had her own names for food, like she calls bacon "meat cheese". It didn't take long to realize she meant confit and I also know how much she likes it. this particular confit has been aged 8 months in duck fat. Usually So tonight it's duck confit and corn on the cob. Of course on her corn on the cob she wanted chicken salt which is a thing. #dinnerathome #poultry #duck #French #notarecipe

How did you age it? I've never heard of doing it for more than a month, but I'm new to the whole confit world

They were aged in the fat right in the sous vide bags in which they were cooked. I stored then in the fridge after that.
