Bul Jol - aka St. Lucian salt cod escovitch

Twice (or thrice) boiled and drained salted cod, flaked and sautéed in olive oil with sweet onions, peppers, tomatoes, garlic, and finished off with several splashes of wine vinegar, fresh thyme, chopped parsley and hot sauce (Bajan is best - sorry dad!) Drizzle with some herbed olive oil after you take it off the heat - an awesome weekend breakfast served with naan bread or, for a more authentic St. Lucian experience, boiled green bananas and/or green plantain.

Mm.... My fav is salt cod fritters... Sooo good!
