Jicama mango slaw with fried tofu:

Slice a small jicama into thin strips. Add two cups of white cabbage and about half a cup of similarly sliced mango and combine. Make a quick dressing of lime juice, olive oil, salt and black pepper. Add a handful of chopped cilantro and a few chopped peanuts. Top with store bought fried tofu.
