Make quick pickled onions. Whisk 1 cup warm water, 1/2 apple cider vinegar, 1 tablespoon sugar, and a bit of salt until sugar has dissolved. Add sliced red onions. Chill for at least an hour.
Make rice. Keep warm.
Make guacamole with 1/4cup diced red onion, half a diced Serrano pepper, salt, pepper, lime juice. Chill.
Make tomato salsa. Scoop out and discard seeds of Roma tomatoes. Dice. Add cilantro, other half of Serrano pepper, and season with salt and pepper. Chill.
Make turkey. Sauté turkey in a hot skillet with salt, pepper, cumin, and chili powder. Cook until browned and cooked through. Remove from pan and keep warm.
Wipe out pan. Add drained corn and drained black beans and season lightly with salt. Cook until warned through, about five minutes.
Divide rice between bowls. Arrange turkey, guac, salsa, pickled onions, and beans and corn on top of the rice. Add sliced radishes if you'd like and a bit of chopped cilantro. Enjoy!
