Salmon Kedgeree

Fry a finely chopped yellow onion in some butter and olive oil until translucent and then stir in 1/4 tsp of ground turmeric, 1/4 tsp of ground cumin and 1/4 tsp ground coriander. Pour and toast a cup of basmati rice in the spiced oil. Add chicken stock and cook. When ready, add flaked poached salmon pieces (I used my Anova sous-vide to cook mine), the juice and zest of a lime, a dash of fish sauce, chopped cilantro and garnish with hard boiled egg quarters.
