Bright and delicious. Fresh orecchiette, with sautéed shiitake and zucchini, seasoned with salt and pepper. Add spinach and peas at the very end, and mix the vegetables with the pasta (leaving a tiny bit of the pasta water and adding some olive oil). Throw in fresh mozzarella, sprinkle with mint and lemon zest, and top with fresh ricotta salata. Perfect Sunday night dinner!
