Plum & Blueberry Galette
Inspired by Yossi Arefi and the amazing fruit from our local farms in Southampton
Toss sliced Italian Plums, Red Plums and Blueberries with Vanilla Sugar, Orange Zest, fresh squeezed Orange, Almond Meal and Brown Sugar. I go light on the sugar, as the fruit is naturally sweet. I sprinkle a layer of Almond Meal on the rolled out Dough (Butter, Flour, Ice Water, dash of Salt) and layer the fruit in a circle in the center so that you can fold the excess dough over the fruit. Brush the edges with egg wash and sprinkle a little bit of Brown Sugar over the edges. In a preheated oven (375 F) bake for about 35 minutes. Sprinkle with Confectioners Sugar & Serve with Vanilla Ice Cream or Creme Fraiche. The amazing smell and taste reminds me off growing up in Europe.
