Jollof Stuffed Peppers. You can actually stuff any rice dish in peppers. To make jollof; make a tomato sauce using 5 tomatoes, two onions and three scotch bonnet peppers all blended together. Let it cook for 30 mins to reduce water.
Then add three cups of rice and stir through. Allow rice to rise and cover with aluminum foil. Should be all cooked after 15 mins.
