Napa cabbage salad with herbs and Spanish peanuts!
Crunchy, salty, tangy and good for you...total (not) recipe. Thinly slice Napa cabbage, chose whatever herbs you have (I used basil and cilantro, but have added mint and parsley also) chop and throw in with the cabbage. Yesterday at the Farmers Market they had sprouted buckwheat, which tastes almost like popcorn and added that too, then threw in a large handful of Spanish peanuts. The dressing is made from a bit of fish sauce (I use Red Boat which only contains anchovies), toasted sesame oil, soy sauce, freshly squeezed limes and a bit of Trader Joe's Sweet Chili Sauce. Stir and toss with the salad.
