Pan seared sea scallops, topped with a quick and dirty mint chimichurri, served with a side of buttered rice. The chimichurri is fresh mint, olive oil, red wine vinegar, a touch of honey and lemon juice, and salt and pepper. Not bad for second ever time cooking scallops!
