Breakfast cookies with oatmeal, blueberries, and super ripe, bruised and squishy market peaches. Mix together oats, AP flour, chia seeds, a touch of unrefined coconut sugar, pinch of salt, baking powder, baking soda, and cinnamon. Separately, beat together mashed peaches, an egg, a bit of almond milk and melted butter. Wet into dry and fold in blueberries, dark chocolate/cocoa nibs and toasted almonds. Scoop, flatten and bake at 350 F for 13-15 min. Freeze what you're not going to eat - can go straight from the freezer beautifully!
