// Curried Vegetable Stew + Salmon //
Toast some fragrant spices (mustard seeds, fenugreek, coriander seeds and cumin are all friends here) in coconut oil, add chunks of chopped onion and soften. Add cubes of any orange vegetables you have - carrots, squash, pumpkin - and a can of really good chopped tomatoes. Add cauliflower florets and simmer until everything is getting a bit mushy around the edges.
Bake some salmon fillets (these were covered in a smashed up paste of garlic, cilantro and lime).
When everything is ready, throw in a few handfuls of spinach. Serve in bowls.
Scatter some green things on top. It doesn't hurt to have some sort of charred bread on the side to help with sauce clean-up.
