Homemade veggie quesadillas. Clearing out the fridge again, which is now my favorite thing. Sautee Kale, red pepper, red onion, jalapeño from the garden, and garlic in a pan with Canola oil on medium heat. Then add pre baked sweet potato and seasoning: cumin, granulated onion, garlic powder, paprika, salt and pepper. Then remember you have a little frozen corn in the freezer and stir in at the end. Spoon over a mix of cheeses on oiled flour tortillas and top with another bit of cheese and another tortilla. Slip in to pre heated broiler on the second rack and flip continuously while watching the tops brown and cheese melt. Ready for dinner when it looks like you really...really need that quesadilla
