Stuffed 8-ball zucchini, filled with ground beef, brown rice and the zucchini insides, layered with Mexican blend shredded cheese. Oven roasted then stove charred fresh corn on the side. The beef was seasoned with salt, pepper, Worcestershire sauce, oregano, chili powder, cumin, and a dash of ground coriander. So tasty, very light, and perfect for a weeknight dinner! The chopped scallions on top were a necessary touch.
