Low-sugar plum jam:
Cook 800 grams of quartered plums with 250 grams of sugar and a good squeeze of lime until it thickens. (Skim off any scum that floats to the top while cooking). Taste and add more sugar if needed. Once done, puree if you prefer it smooth. I like to keep it quite chunky.
