Eggplant Parmesan. Thinly sliced eggplant. Brush with olive oil on both sides. Then grill or brown on both sides. Layer a baking dish with marinara sauce (Rao's), then add a layer of eggplant slices. Sprinkle with grated Parmesan and Romano. Cover with another thin layer of marinara. Add another layer of eggplant....then marinara again and finish with more Parmesan and Romano. Drizzle with olive oil all over. Bake at 425 for 10 miniutes. Then decrease oven temp to 375. Cook for 10 more minutes.
