Lazy Thursday: simmer puy lentils w bay leaves, onion, garlic until done. Meanwhile fry up more onion with some Jimmy Nardello & Calabrian peppers, walnuts, and more garlic. Drain lentils and add to peppers with some balsamic and a bit of EVOO. Salt, sauté. Plate and top with parsley, lemon zest, and finishing salt.
