Fresh Garden Omelet: chop up some fresh herbs/veggies (I used basil, thyme, spinach and cherry tomatoes from the garden). Whisk 4 eggs in a bowl. Add veggie and herb mixture to the eggs. Heat butter in a frying pan over medium-low heat. Put in egg mixture and cook until eggs are mostly done. Add feta and fold over. Cooke for another minute or so to melt the cheese.
