Easy peasy breakfast!
Slice cherry tomatoes and mix with a splash of lime juice, extra virgin olive oil, salt, pepper and fresh chives. Chill.
In a hot skillet, add small diced golden potatoes and season with salt, pepper, garlic powder, and a bit of cayenne. Cook on medium high until browned and crispy. At the end, toss in fresh sliced chives. Remove from heat. Keep warm.
Make a few fried eggs. Divide potatoes between bowls and top with eggs. Serve with tomatoes. Garnish with a bit more chives. Enjoy!
