Peach, raspberry, and strawberry galette in a whole grain crust! Tossed fruits with a few tablespoons of sugar rubbed with lemon zest and saffron, a pinch of salt, and a spoonful of cornstarch. Spread the dough with some peach jam before piling the fruit on. The crust is half spelt + rye but so tender and flaky thanks to a couple turns a la puff pastry. The perfect late summer dessert.
