Taking a laissez-faire approach to summer produce. Sauté leeks and garlic in olive oil and add diced tomatoes (I had two plum and a beefsteak on hand). Season - Cumin or some pepper might tickle your fancy? Cook them down a bit, add in fresh corn and zucchini, crank the heat up a bit, and whenever the zucchini is soft, plate up - A smattering of scallions and herbs is more than welcome. Forgive me my lack of imagination.
