Preheat oven to 425 degrees. Prepare a baking sheet by covering it in aluminum foil and spraying it with a small amount of cooking spray.
In a large bowl, put a head of cauliflower chopped into small pieces. Set aside.
Combine garlic powder, coarse salt, black pepper, onion powder, chili powder, cumin, turmeric, ginger, paprika, cardamom, cayenne, and garam masala in a small bowl.
Dump the spices over the cauliflower; add olive oil and work with your hands to coat the florets evenly with oil and spices.
Bake in over for 25-30 minutes, until done.
