A humble spinach salad. Baby Yukon gold potatoes, halved and tossed with fresh thyme, minced garlic, Parmesan, olive oil and some dried rosemary I had around. Roasted on 425 until golden, and pile on spinach bed. Fry uncured no-nitrate bacon slices, chop, and pile on spinach bed. Boil ten minute fresh eggs and halve, throw on salad. Shake up some Dijon, honey, white wine vinegar, and olive oil in a small ball jar and allow your husband to drizzle on first because you're drinking white wine and feeling generous. Finish with a generous amount of fresh ground pepper and your ready to eat!
