Quinoa stuffed peppers--cleaned peppers rubbed w/olive oil salt and pepper roasted for 20 min at 400 degrees. Cooked quinoa in veg broth. Sautéed onion, red pepper, jalepano pepper, garlic, s & p, and oregano. Added sautéed veggies w/ feta cheese to quinoa stuffed peppers. Finished by topping with toasted walnuts and bread crumbs baked 10 min at 350. Nice and lite!!
