Yellow zucchini noodles with mushroom Bolognese.
While I vowed never to buy another piece of kitchen equipment, I just got a spiral vegetable/fruit device....two medium yellow zucchini made enough pasta for two. I made the pasta, let is dry on a baking sheet for an hour or so, then put in the in microwave for 2 minutes...al dente pasta! Served it with mushroom Bolognese I had thawed then warmed on the stove and topped with shaved pecorino. I was surprised how good it tasted...now I'm hooked on spirals!
