Chorizo bolognese with fresh mozzarella! Heat olive oil, add smashed garlic and sprigs of rosemary until fragrant. Remove rosemary and save. Remove chorizo from casing and break up as it cooks. Add herbs, chopped tomatoes (from a can or fresh), tomato paste, a little broth and a little wine. Top pasta with the sauce, torn mozzarella, and the crispy rosemary.
