Roasted Cauliflower Rice

Pre-heat oven to 375

Break off the florets from a whole head of cauliflower. In a food processor and in small batches pulse florets to consistency of rice. Pour into bowl and continue with remainder of florets. Add olive oil to lightly coat and 2-4 minced garlic cloves to cauliflower rice and gently mix in.

Spread evenly onto a foil covered cookie sheet. Roast until golden.
