Mix 500g turkey mince, 2 tbsp grated ginger, 2 tbsp minced lemon grass, 3 cloves minced garlic and chilli flakes to taste. Form balls and evenly space on oven tray. Bake for ~30 mins at 200 C.
Mix 1 part sweet chilli sauce, 1 part soy sauce and a dash of sesame oil and apple cider vinegar.
Steam some greens, I used 1 bunch of broccolini, and 1 bunch asparagus. Sauté 250g sliced mushrooms in approx 3 tbsp of sauce, and add steamed greens to mix and coat with sauce
Serve over vermicelli noodles and add some extra sauce, herbs and onion on top!
