Carrot Cake Cookies
Since everyone in the family loves carrot cake, I started making these cookies years ago for a less messy way to pack it for lunchtime/after school treat.
This recipe ⬇️ makes a lot of cookies.
A few adjustments: I reduce the sugar a bit since the cream cheese filling is sweet. I usually add pecans and sometimes swap dried cranberries for the raisins. Lastly, since I use the food processor to grate the carrots, I briefly pulse the shredded carrots, oats and raisins for a finer cookie. Enjoy!
