Steak with Mushroom and Onion Pan Sauce, Asiago-Garlic Mashed Potatoes and Spring Salad. Season the steak with salt and pepper and then bake in the oven at 250 for about 45 minutes. Rested for 5 minutes then seared in a cast iron skillet w/ oil for 1 minute a side and finally basted with thyme and garlic butter after it was flipped. Added onion and mushrooms sautéed about 1 minute season with salt and pepper add dried thyme and then add blackberry juice spiked with red wine vinegar, reduced to half, add beef broth and reduce again then add pat of butter. For the mashed potatoes boil in salted water, drain and then add milk simmered with crushed garlic, mash. Remove from heat and add butter and asiago cheese.
