Vegetarian borscht:

Sauté a diced onion and a few cloves of garlic in some olive oil.

Add grated beets, carrots and potatoes along with a good handful of sauerkraut and cook covered until tender. Throw in a few bay leaves, dried parsley and season with salt and black pepper. Pour in veg stock/water and cook with a lid on for 15 mins.

Remove bay leaf, adjust seasoning, and blend in batches. Top with more sauerkraut and sour cream and serve hot or cold.
