Roast up those golden beets, 400 F for about an hour until fork tender. Slice up a beet. Add chickpeas and sliced red onion to the pan if you want to roast them, eating them raw also acceptable. Throw the beets, chickpeas, and red onion on top a bed of baby kale. Add some cherry tomatoes, sliced radish, and chopped green beans. Sprinkle on some feta. Enjoy this with your fav dressing!
