Zucchini Bread: Mix 2.5 cups grated zucchini, 2 cups white sugar, 1/4 cup raw sugar, 1 cup oil, 3 eggs, 3 teaspoons vanilla in a bowl. Sift 3 cups flour, 1 teaspoon each baking powder and baking soda, 1 teaspoon salt, 3 teaspoons cinnamon, 1/2 teaspoon nutmeg. Mix wet and dry together, pour into greased and floured loaf pans. Bake 325 degrees for 55-60 minutes until toothpick comes out clean.
