First, cut the carrots however you like (mine are Julienned carrots). In a proper skillet, heat olive oil and add the carrots. Cook them in medium/high heat until slightly burned (not too much of course). Add the balsamic vinegar and let them cook a bit longer until the vinegar is reduced. I did not add any salt or pepper because I think the balsamic/sweet flavor is more than enough.
