Seriously upping my afternoon tea game this weekend with this dainty tea set and the lemon bars to end all lemon bars: Shelley Richardson's Elmwood Lemon Bars. Sift 1.5 c all-purpose flour, 1 tsp baking powder, .5 tsp salt. Set aside. Combine a 14 or 15 oz can condensed milk with .25 tsp lemon essential oil (this adds a great lemony punch, but if you don't have any on hand, just leave it out), and .5 c lemon juice in medium sized mixing bowl with a whisk. When smooth and thick, set aside. In a large bowl, cream 5 oz butter and 1 c brown sugar. Add sifted ingredients, then oats for a crumbly mixture. Pat 2 c of crumbs into bottom of a greased 8 inch baking dish. Spread condensed mix mixture stop crumb layer. Sprinkle remaining crumb mixture over layer, smoothing gently. Bake 30-35 minutes at 325, or until bars are brown around the edges. Remove from oven, cool completely, cut into small squares and refrigerate.
