lamb and mint samosas for something flavorful and light!
for the filling: toasted cumin seeds, finely diced onion, ground lamb, and crushed garlic. season with ground cumin, ground coriander, freshly grated ginger, garam masala, chili powder, kosher salt, and finely chopped fresh mint right before folding the samosas.
i find delicate phyllo dough pretty hard to work with, but it's worth it for these lovely little guys. perfect for a #notsaddesklunch if you have access to an office freezer and toaster oven. make your samosas, lightly brush with melted butter (and a sprinkle of toasted sesame seeds or cumin seeds, if you want!), flash freeze and then toss into a airtight bag. to bake from frozen, 20-25 minutes at 400F.
