Roasted heirloom tomato, beet, and burrata salad
Oven roasted heirloom tomatoes: slice tomatoes in half and place cut side up in lightly oiled baking dish. Mix olive oil, honey, garlic, salt and pepper together and drizzle over tomatoes. Bake uncovered 30 min at 375F.
Honey balsamic beets: roast beets in oven. Mix equal parts honey, balsamic vinegar, and butter in small sauce pan and boil x 1 min. Mix with cut beets and refrigerate.
Serve over arugula or greens of your choice!
