Roast chicken legs with veggies.
A little cramped in here but how good does that look 😍
Chiken legs or thighs 1/2 kg
4 small carrots
I bunch of spinach
2 garlic cloves
1 tomato
I can chickpeas
Lemon juice 1 tbsp
Lemon slices
Chicken stock 1 cup
Salt and pepper

For marination:
2 tbsp Soy sauce
1 tspChilli flakes
1/2 tspGarlic powder
2 tbsp Olive oil

Marinate the chicken for one hour. Then sear it on very hot pan with little oil in it, on both sides for a couple of minutes. Remove chicken from pan. In the same pan, add garlic, carrots fry a bit. Add spinach. Wen the spinach leaves become a bit wilted, add chickpeas, tomato, stock, salt pepper. Let it simmer. Add marination liquid. Add chicken back to the pan. Add Lemon juice and Lemon slices. Pop in the oven at 400F for 30-40 mins till chicken cooks through.
