🌱🌿Grilled Zucchini Ribbon Salad 🌿🌱
Took a note from SeedSheet and thinly peeled zucchini into ribbons and stacked them on a skewer. Made a mixture of coconut oil, minced garlic, lemon juice, salt, pepper, and chili flakes.
Grilled the zucchini in a cast iron skillet on med-high heat, occasionally brushing the garlic mixture on, and rotating once each side is browned.
Nestled it on top of a salad of mixed greens, blueberries, radish matchsticks, walnuts, and chia seeds. Topped it all with lemon zest and a creamy lemon/agave/coconut oil dressing.
