Here is a quick lunch. I like to keep poached chicken breast in the fridge and in summer I like to make a chicken, tomato basil salad.

5 oz. chicken breast
2 oz. good French bread
1 large garden tomato chopped
6-7 basil leaves
A splash of red wine vinegar
A drizzle of good olive oil
Salt and pepper

1. Toss the salad ingredients together in a bowl, season with salt and pepper then drizzle the vinegar and oil over the top.
