X marks the spot. Start a pot of sea salt tasting water for the pasta(I am using bucatini). In another pot I am going to blanch and peel these tomatoes (1.5lbs) and then crush them with my hands into a bowl, juice and all. I want to make Lydia Bastianich's fresh and simple tomato sauce. Start the pasta. Pour a 1/4C EVOO into a 14inch skillet and sauté 4TBS of slivered garlic until it is aromatic. Scatter the tomatoes over the garlic, juice and all and add 1 cup or more of pasta water to the sauté pan along with the tomatoes. Simmer until the tomatoes are barely cooked. Drain the pasta, toss with sauce top with cheese and serve. #fresh #garden #summeronaplate #summer
