Spanish night! 💃 for frittata: sautée sliced fingerling potatoes, cippolini onions, and sliced shisito peppers (or whatever is in season) in a pan coated with olive oil over medium heat. Beat eggs and a splash of milk (I used 8 eggs) then pour into skillet to coat veggies. Once edges center are set you can either pop it under broiler or be brave and flip it!
