Double peanut butter cheesecake recipe testing… something like 1/2 c almond flour, 3/4 c peanut flour, 3 tbsp butter, 2 tbsp coconut oil, 2 tbsp swerve sweetener… mixed and pressed into oiled pan… (room temp filling ingredients) 16oz cream cheese, 4oz creme fraiche, 1/4 c xylitol, 1/4 c swerve… stir, beat, add 2 eggs 1 at a time, beating to incorporate… add maple/vanilla extract, dash cinnamon, dash salt… in a separate bowl, combine peanut flour/almondmilk/coconut oil/liquid stevia to form a frosting-like mixture… beat into batter and spoon over crust… instant pot 35 min, natural release, chill
