Best chicken breasts thin using a wine bottle (or what have you), season with salt, pepper and olive oil and cook on a cast iron griddle at high heat for a few minutes each side. Glaze cooked sides of chicken with marmalade and sprinkle with chopped fresh thyme. You can do this while the reverse side cooks but make sure to only cook marmaladed sides for a minute or so, or everything will burn!
