Zucchini pesto lasagna, roasted tomato, pesto, zucchini, ricotta, pecorino Romano grated, fresh mozzarella. Cut zucchini into thin slices drizzle with olive oil and roast in 375 degrees. Place some roasted tomato on the bottom of baking pan, add layer of roasted zucchini, spread pesto on the zucchini, add some ricotta, grated cheese and mozzarella, repeat. Bake in 375 degree oven for approx 30 minutes or until brown and bubbly#notrecipe#lowcarb#vegetarian
